
Oriental Cashew Chicken
Product Description
A little twist on traditional pasta sauce! Think of it as a garlic & soy stir fry for pasta. Great for our Red Pepper Fettuccine! Add mushrooms and a red bell pepper and YUM! Serves 4 to 6 people.
You Will Need:
12 OZ. Red Pepper Fettucine or pasta of your choice
2 Tbl peanut oil or vegetable oil
1 medium red pepper, cut into 1/2” squares
8 oz. fresh mushrooms, sliced or 4 oz can sliced mushrooms, drained
1 bunch green onions, sliced, tops only
3/4 cup cashews
DIRECTIONS:
Cook pasta according to package directions. Heat oil in large skillet over medium/high heat and stir in spice packet, cooking for 1 minute. Stir in 2 cups water. Add mushrooms and red pepper. Simmer for 8 minutes. Add green onions and cashews. Simmer for 1 minute. Pour over pasta and toss. Serves 4 to 6 people.
Variation: Cut 1 lb. boneless, skinless chicken breasts into 1” pieces. Brown in skillet with oil for 3 minutes. Add sauce packet and water and proceed as above.
QUICK & EASY STYLE
Add the spice packet to 2 Tbl. butter and 2 cups water. Simmer for 8 minutes. Pour over pasta, chicken or pork.
